You can not do like what you said above. Category and Brand always display name and quantity of product.
They are not like a filter such as color, size, price, ...

It is a unique option for each page, you will see it in the edit page (screenshot_1), it decides whether that page will receive that page's own settings or general settings in the theme options.

Text color has no option to change, you can use custom css.

Theme will not interfere with orders. You can try by deactivating Dukamarket and related plugins like Ovic addon toolkit, activate default themes like Twenty Twenty-Four and try again to see if you have the same problem.
