- You need to update theme only.( Note: you should backup site before)
- About theme options issue, you can choose from the Dashboard>>KuteShop( Look at the top of page)
- About update theme issue: You can refer this document, it's the same

Back to the first issue, I removed the code in "header 1.php" however it still shows the categories on the header. I just want to fully remove the category on mobile. How is this possible?

The cause by you have not enable it. YOu need to enter the Dashboard choose Visual Composer>>Role Manager and do as the attachment screenshot. Please do it and let me know your results.
