I got your issues:

1. When you imported the demo data, all contents would be imported into your site, and all your content, data would be lost.
And you have to add/import again your own data.

2. You can change this info here: Appearance >> Customize > Site ID: https://prnt.sc/KiSozCvOJ3nu

I tried to change the website's name or tag from Customization but it didn't apply!
