Hi @humphrey_wampula,

Well, yeah. Because the Header is the unique part you are just able to select the styles in Theme Options only.
Because it is not the page that you can edit with any templates. You just can enter the information as the requirements of that header style.
If you want to get the header style as your intention, it will be the customization.

So, please let me know if you want to change anything from the header style.
Take some screenshots and provide the admin account. I will help you to check it.

My guy, it would've been as simple as properly indicating in the DOCUMENTATION steps on how to make changes to the header; as in change its logo, change colour, and blocks/parts/arrangement of the header. Could you pls be couteous enough to share that here? Or point me to a tutorial if any?

I guess that you are getting stuck with changing the Logo image, and colors, ... in Theme Options but all don't apply to your site.
If I am wrong, please take the screenshots and provide the admin account, I will help you to check all.
