How to modify the 20 headers included by the theme?

Hello,

I have installed the theme but I can't find where to modify the headers that can be selected in theme option / header / header desktop.

Is it possible to modify the form or do I have to recreate a new one with Elementor pro? (see example of a header I would like to modify in attachment)

Also, concerning DEMO 2, how can I reproduce a menu like "all department" with illustrations?

By the default of theme, customers can not edit by the Elementor or other one. In your case then you need edit php codes at the wp-content\themes\biolife\templates\header and the functions.php file at the wp-content\themes\biolife.
Also to replace subcategory on Vertical category: You enter the dashboard choose Appearance>>Menus>> and then choose your menu as the attachment screenshot below
