Your screenshot is not the same as the current header. So could you please let me know what the header you want to modify?
Or you can do the modification in the Child theme

We hid this via CSS and installed a program to override your header setting as it was not flexible or responsive.

Because this is the fixed part of the header so there will not have any option to hide it. You have to use the CSS code to hide it
