Edit global header

Hi, I bought this theme and am looking to build an e-commerce site.
I have been working with Visual Builder for many years, but as this theme is very nice I decided to upgrade to Elementor.
I've already searched the tickets to change the global header.
Logically I thought it was simple, Theme Builder -> Header -> import "Organic 3" header template and so change everything, but from what I seem to understand, the header cannot be changed, is that correct?
I need to remove the currency and language options and improve the translation of "login or register" in Italian.
I tried from Top Bar Menu Language and Top Bar Menu Currency, but I couldn't change it, this should be a global change.
Hope there is a way to fix it!
