category settings on the shop page

Hi
It seems to be all right.
But I still wanted to ask you 2 things,
1) Is it possible to change the category of products displayed on the general product page? example instead of chocolate almonds to show spreadable creams?
2) the menu on the left in the shop groups the categories in alphabetical order, but if I wanted to give priority to certain categories can it be done?
