Confusion - Headers - Footers - Logos - Etc

Greetings,
I have some questions and concerns regarding your theme. Thus far it is the most difficult theme to modify that I have encountered.
I have been looking around the dashboard trying to put pieces of the theme together like a puzzle. In addition, I have spent more time trying to do 2 simple things than it takes me to create full builds with other themes from the past.
With that being said, I am hoping you can clarify these concerns. My next course of action is to request a refund on themeforest for the amount of the purchase.
Concerns:
Header Settings:
When I assign a header menu and style it does not take effect (shop page).
Can you edit the header globally in order to avoid choosing one each time you create a new page? Same question in regards to the footer.
It is very unusual that the header is not customizable in 1 primary location.
Where do I edit the header/footer? In the theme options, on the pages, theme editor?
LOGO:
Depending on which page visited, the main-logo changes size
There are theme options on each page. There is a section to add LOGO to the site on each page.
There is also a LOGO for the site setting in the theme options. Which one am I supposed to use?
Same goes for the header and footer areas.
MOBILE:
There are mobile options on each page as well as the theme options. I am beyond confused as to how these options work.
MENUS:
The demo import installed around 30 menus. I have no idea what to do so I am deleting them one by one. This is extremely time consuming.
While using the mega menu I was trying to edit the sub menu and its links. Unfortunately I was unable to figure out how to do so.
