Everything in my Cart appears in English while woocommerce is setup in Spanish

The theme is just available for English only.

If your site is multi language, you can use plugin WPML. This is the paid plugin and it will translate automatically.
Otherwise, you can use Loco translate plugin. This is a free plugin so you have to translate manually.
