how to change "undermenus" when click on categories

nad if you have a look on the homepage (yes it looks rubish at the moment because all our former design does not work with Kuteshop as it seems) why is categories pulldown menu not collapsing again and why is going over the content?

as you can see in the screenshot (red circle) next to football club it show some football clubs starting in alphabetical order ... some of this have not any stock left and should not been shown, and is there a way to choose which "undercategories" in this case football clubs (the same happens when you click on any of the categories in the menue, for example please see screenshot2 attached to this answer, this time next to the black background "girls" you see " paw patrol , roald dahl, secret life of pets, and babrie" this is not even alphabetical or in any relation when the product categoeris have been created, the "barbie" category is empty and should not be there at all while other categories that have stock are not showing and I would like to know how I can get control of what is showing there.

The issue with the vertical menu has been solved for now as i just changed the template settings back from full width to "default" but still with a full width page it don't think the content (or even banners) should be overlayed by the widget area.
