Problem "Home fluid width" and text color

Hello,
I have a problem with the "Home fluid width" layout, and the menu color.
In fact, I need to put the menu in white color (to see on the picture), with my logo in white color, and when I scroll down, remake the menu in black color with different logo (please check pictures in attachment).
How to make that please?
